Ingredients
  

  • 1 lb kielbasa sliced into 1/2-inch pieces
  • 1.5 lbs Yukon Gold potatoes cubed
  • 1 bell pepper sliced
  • 1 small onion sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Slice kielbasa into 1/2-inch pieces.
  4. Cube potatoes into 1-inch pieces.
  5. Slice the bell pepper and onion.
  6. In a large bowl, toss potatoes, bell pepper, and onion with olive oil, smoked paprika, garlic powder, salt, and pepper.
  7. Spread the mixture evenly on the baking sheet.
  8. Add kielbasa slices, ensuring they are evenly distributed.
  9. Bake for 25-30 minutes, stirring halfway through, until potatoes are tender and golden.
  10. Garnish with fresh parsley before serving.
