Ingredients
  

  • 1 lb lean ground chicken 93% lean
  • 1/2 cup breadcrumbs or crushed saltines
  • 1 egg
  • 1/4 cup minced onion
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce
  • 2 tbsp ketchup
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Chill your hands and a mixing bowl in the fridge to keep the ingredients cold.
  3. Pat the ground chicken dry with paper towels to remove excess moisture.
  4. In a large mixing bowl, combine breadcrumbs, minced onion, garlic, thyme, smoked paprika, salt, and pepper.
  5. Add the ground chicken, soy sauce, egg, and ketchup to the mixture.
  6. Gently mix the ingredients using a spatula, folding instead of stirring to maintain texture.
  7. Line a baking dish with parchment paper for easy cleanup.
  8. Shape the mixture into a compact loaf, pressing the edges firmly.
  9. Brush the top with olive oil and sprinkle with additional paprika if desired.
  10. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  11. Let the meatloaf rest for 10 minutes before slicing to retain juiciness.
